Becca's Penne Pasta with Pesto, Pine nuts and sun dried tomatoes and Chicken

3 antibiotic free chicken breasts. Cut up and start to cook in good fry pan with olive oil and garlic. (about 15 minutes)

Begin to cook Penne in boiling water. (about 8 minutes)

In small saute pan, put you cut-up sun dried tomatoes which are in olive oil, and your pine nuts and let saute. After 4 minutes take off the heat and let sit until you drain the pasta. Then add couple tablespoons of Pesto to the saute pan, mix and pour over pasta. Take cover off chicken for last few minutes to dry and pour over the pasta.

Eat with parmesan chees bread.

Enjoy with milk or wine.
Note: we created this dish last Christmas after our Willard weekend turned into a Reston Hyatt 2007 and we followed our trip to the Smithsonians with a quick Italian dinner before meeting the Stubbe kids to return to Richmond
