Jessica's Christmas Chili

1) saute onions in olive oil (one red and one sweet)
2) add mix of ground turkey/ ground turkey sausage - 2 part reg and 1 part sausage, do not drain unless really fatty.
3) Once mostly cooked, add TB chili powder, tsp paprika, 2 tsp oregano, tsp cumin, little H20 and simmer 5-10 minutes
4) Add this mixture to crock pot then add:

Canned drained beans (1 each kidney, pinto, black, white) 1-2 garlic gloves pressed or minced, sliced peppers (pablano, red, orange, yellow bell) diced jalapenos (3-5 small wiht some seeds) can of Guiness and canned tomatoes (diced with onions and spices)

Simmer for at least an hour, taste, then add salt, chili powder, paprika, cumin, oregano, cayennne.

Simmer for rest of day, Go shopping, get dressed, go to church, come home and eat with shredded cheese and sour cream and corn bread by cozy fireplace.

Note: This was a lifesaver on Christmas Eve when I was in bed with major gi bug and Jessica came to the rescue for a new version of our traditional cozy Christmas Eve Chii beside the tree.
