ham pot casserole

Preheat oven to 350 degrees. Start pot of water boiling. Cut potatoes in large cubes and boil for 8 minutes. While that cooks, chop some nice ham (I use a box of deli select honey ham on sale 2 for $5.00). Saute half sweet onion in TB buttter til clear. Dump onion and butter in casserole dish, dump in ham, then drain and dump in potatotes. Add 1/2 cup of half and half or evaporated milk (Jessica adds can mushroom soup). Mix with some sharp cheddar and top with lots of good sharp cheddar and pop in oven for 20 minutes. Meanwhile cut up some good bread and dip in butter and grate some parm over top. Stick in oven on broil for the last minute. Enjoy.
